Cute and creepy Frankenstein Layer Cake is so easy to make at home! Little kids love it!
Hey, friends, hey! I made you a cake!
This cake is so cute and SO easy, I can’t even stand it. Lucy actually had a big fat slice for breakfast (she was DYING for me cut into this thing). I know that cake for breakfast isn’t considered the wisest of life choices, but I’m at the point in my parenting career where everything is sorted into two categories — “Will it kill them” or “Will it NOT kill them.”
Cake falls into the “not kill them category,” making it unworthy of the effort required to deny them of it.
Very simple. I’m not conducting rocket science experiments over here, that’s for dang sure.
Frankenstein Layer Cake for breakfast for everyone!! Yay Halloween month!!
To show you just how simple this little guy REALLY is, I have the funnest little video to demonstrate! I may or may not have had a preschooler hovering over me while I was making it, asking if it was time to cut it yet.
It’s hard to deprive her when she’s the only person in the family who is consistently beside herself with excitement every time I make a dessert. Thank goodness she was born or I might have had to find a new family.
My favorite thing about this cake is that it really doesn’t require any special ingredients besides food coloring. You can most likely find everything you need at the regular old grocery store with no special trips! I hate special trips. Anytime I have to run more than two errands at a time, I basically turn into the world’s hugest brat. All the getting in and out of the car! I’m just not cut out for that kind of life. I’m a one trip kind of girl.
Ingredients
- 3 (8 inch) round layers of any cake
- Chocolate ganache "hair":
- 1/2 cup chocolate chips
- 1/3 cup heavy cream
- 1 Tablespoon light corn syrup
- Buttercream frosting:
- 2 sticks salted butter, slightly softened
- 1/4 cup heavy whipping cream
- 2 teaspoons vanilla extract
- 4 cups powdered sugar
- 2 Tablespoons light corn syrup
- Several drops green food coloring
- One or two drops of yellow food coloring
- Black Food coloring
- Eyes:
- 2 Oreo Cookies, split in half, frosting side (eat the nonfrosting sides -- you don't need them)
- 2 brown M&M's or Reese's Pieces
- Bolts:
- 2 regular sized marshmallows + toothpicks, lollipop sticks, or popsicle sticks
Instructions
- Trim cake layers with a serrated knife to level.
- Prepare ganache: In a microwave-safe bowl, heat chocolate chips and heavy cream until melted and smooth, stopping to stir thoroughly every 20 seconds. Stir in corn syrup and place in the refrigerator to cool and thicken.
- Prepare frosting: In the bowl of your mixer, beat butter, cream, and vanilla on medium-low speed until combined. With the mixer on low, slowly add powdered sugar. Add corn syrup and increase speed to high. Beat for one minute, scraping the sides of the mixer if necessary.
- Set aside a few spoonfuls of frosting and color them black. Add green and yellow to the remaining frosting and stir in until desired shade is achieved. Assemble and frost cake (don't worry if you can't get it perfectly smooth! Frankenstein is not meant to be perfect).
- Place black frosting in a piping bag fitted with a small round tip (#3 or #5 is great) OR just use a sandwich bag with a teensy bit of the corner snipped off. Using a tiny dab of frosting, attach a brown candy to the center of each frosted Oreo half to make eyes. Use a tiny dab of black frosting to attach each eye to the side of the cake to make a face.
- Pipe a mouth -- if you watch the video, you'll see that I used my small spatula to create a "template". You could also draw one with a toothpick and trace over it with the frosting.
- Press a marshmallow into each toothpick or stick and push into either side of the "face".
- Remove ganache from fridge. It should be thickened but still stir-able. Pour on top of the cake and spread gently to the edges, just BARELY pushing it off the top of the front of the cake to create a hairline.
- Keep cake chilled until ready to serve.
